Widowed potatoes

  • Sauté the chopped onion in a pan with a little olive oil.
  • When the onion starts to colour, add the finely chopped garlic.
  • Leave to simmer for 10 minutes over a low heat.

  • Add the potatoes, peeled, washed and cut into chunks (cut into irregular pieces with a knife). Leave to fry for 5 minutes.
  • Add the paprika and stir well, cover the potatoes with broth.
  • Add salt and pepper to taste, the bay leaf, the saffron threads and a little chopped parsley.
  • Cook over a medium heat until the potatoes are tender for about 20 to 25 minutes.

  • Leave the stew to stand in the casserole for a few minutes.
  • Serve and garnish with a little more chopped parsley.
