Sweet potatoes stuffed with chickpeas

  • Wash the sweet potatoes without peeling them.
  • Cook the sweet potatoes in a pot until tender, about 15 minutes. If you prefer, you can also use a packet of Sweet Potato in the microwave for 7 minutes.
  • While the sweet potatoes are cooking, prepare the quinoa until tender. Drain and set aside once ready.
  • Preheat the oven to 200º.
  • Leave the sweet potatoes to cool and cut them in half. Using a spoon, scoop out the centre, taking care not to break the skin, to create a kind of bowl.
