Potatoes and beans with Chantilly foam

  • Peel and cut the potatoes into pieces of about 3 cm.
  • Boil the potatoes in salted water for 25 minutes.

  • Starting with the mayonnaise we have in the fridge, mix with the cream and add the strained lemon juice, season with salt and mix.
  • Place the mixture in a siphon and add two charges of N2O.
  • Keep the siphon in the refrigerator until use.

  • With the help of a knife, remove the ends of the beans and cut them into two or three pieces.
  • Cook the beans in boiling salted water for 4 minutes.

  • Serve the drained potatoes on a plate with the beans on top.
  • Put the foam from the siphon on top of the beans.
