• Preheat the oven to 160ºC and wash the garnishing potatoes, peel them, and cut into 3mm thick slices.
• Peel the onion and cut it into thin strips.
• Place the potatoes and onion on the baking tray, arranging them so that they are packed together but in a few layers.
• Peel the garlic, grate it and add it to a bowl in which we mix it with 4 tablespoons of oil, black pepper, salt and the herbs we have chosen.
• Mix everything well and then spread it over the potatoes, stirring them well so that they are completely impregnated.
• Cover the tray with aluminium foil and place it in the oven at medium heat for 1 hour.
• After an hour, pour a little white wine over the potatoes, then bake them again, this time without the aluminium foil, for 15-20 minutes at 180ºC.
• After this, they are golden brown and ready to be served with the main course.
