Violet potato, burrata and rocket gnocchi

Dinner with friends in sight and want to surprise with something different? Prepare this recipe for violet potato gnocchis or gnocchi. It is a very simple, eye-catching and different preparation that has a spectacular flavour thanks to the burrata and rocket sauce.

  • Wash the potatoes and cook them for 15 to 20 minutes. 
  • Once cooked, peel and mash or mash in a potato masher. 
  • To prepare the gnocchi, make a volcano with the mashed potato on a floured surface. Add the egg yolk and mix, adding flour little by little. 
  • Let our potato dough rest for a few minutes. 
  • We make cylinders and cut them. Use a fork to make the characteristic gnocchi marks. 
  • Bring salted water to the boil and cook our violet gnocchi for about two minutes. 
  • Once ready, sauté in a frying pan with butter and pepper.
  • Serve with the open burrata on top, salt, a drizzle of olive oil and a few leaves of rocket to finish. 
  • Now we have our violet potato gnocchi dish. Nice and different with a spectacular taste in the purest Italian style.
