Potato gnocchi with green sauce

  • Wash the potatoes and boil them in plenty of water without peeling them.
  • Peel the potatoes and mash them in a potato masher and drop them on a floured table.

  • Add ¾ of the sifted flour and the egg to the purée.
  • Knead until the dough is smooth and fluffy.

  • Divide the dough into 4 equal parts and make cylinders of about 1cm diameter each.
  • Cut each cylinder by 2cm.
  • Set aside in a bowl sprinkled with flour so that they do not stick together.
  • Cook in boiling water and remove when they rise to the surface.

  • Place on a plate with melted butter and add sauce to taste.
