Warm salad of mashed potatoes and pods

  • With the help of a peeler, remove the strands from the sides of the beans and remove the ends.
  • Put 2l of water in a saucepan and when it boils, add the beans and cook for 1 minute.
  • Soak the beans in ice water for 2 minutes, drain and dry them.
  • Cut them into thin julienne strips and remove any seeds inside and season with a few drops of oil.

  • Put the whole, unpeeled, well-washed legs into the water used to cook the beans. Put them on a low heat and cook until they are cooked, checking with a toothpick and feeling their soft interior.
  • Peel the potatoes and place them in a bowl and mash them with a fork.
  • In a frying pan put oil and brown the garlic cut into thin slices, remove the pan from the heat and add the paprika, stirring constantly, until the temperature drops.
  • In another clean frying pan, place the potatoes over a medium heat, sauté them and add the garlic and paprika oil and stir until well integrated, remove from the heat and season with salt and pepper.

  • In a shallow dish, and with the help of a metal mould, place the potato in the centre, flatten it well and place a pile of green beans on top,
  • Remove the ring and finish with chopped chives, pea shoots and the flowers.
