A potato salad with a difference? We bring you the perfect recipe to accompany any meal with friends or family this summer. Rich, healthy and with a unique touch thanks to the hard-boiled egg or boiled egg and avocado, follow the instructions and try it this weekend!

Ingredientes (4 pax):

4 patatas medianas (para cocer con piel)
4 huevos
200-250 g de judías verdes (o cualquier otra verdura que prefieras)
2 pimientos rojos
2 pimientos verdes
2 aguacates
Zumo de 1 limón (para rociar el aguacate)
Aceite de oliva (al gusto para el aliño)
Vinagre (al gusto para el aliño)
Sal (al gusto)
Pimienta (al gusto)
Perejil fresco (opcional, para decorar)
Aceitunas negras (opcional, para añadir al gusto)

Preparación:

  • Boil the potatoes in their skins and the eggs in the same saucepan with plenty of water.
  • In the meantime, we cook the vegetables with which we want to accompany this recipe, e.g. green beans, or we chop the raw ingredients, e.g. red pepper and green pepper.
  • After 10 minutes, remove the eggs and keep the potatoes on the heat until they are soft. We can run the eggs under cold water to work with them.
  • Now it is time to peel and prepare the sliced potatoes, the chopped vegetables, the sliced hard-boiled eggs and the avocado in wedges.
  • Cut the cooked potatoes into slices and the avocado into wedges.
  • And sprinkle a dash of lemon juice on the avocado to prevent it from oxidising.
  • Finally, we place our ingredients and dress the salad with a drizzle of oil and a dash of vinegar together with salt and pepper. We can also add chopped parsley or other fresh herbs or black olives.
  • And to the table! A healthy and fresh salad.
