• Cook all the organic potatoes in plenty of salt for 30 minutes until tender. 
• Leave to cool and mash with a potato masher or simply a fork until it has the consistency of puree.
• Add the egg, Parmesan and sifted flour on top of the puree. 
• Add salt and pepper. Stir until everything is homogeneous and without lumps so that our churros turn out perfectly. 
• Put the dough into a piping bag. If you want to give a more realistic touch to these churros, you can use a piping bag with a star nozzle. 
• We make strips of dough directly into the frying pan with plenty of hot oil and leave it until the churros are golden brown. 
• Leave to rest for a while and that's it! Serve on a plate and enjoy their great flavour with the sauce of your choice, they are also great as a garnish. 

You can remove the excess oil with kitchen paper when removing the churros from the frying pan with olive oil or sunflower oil, depending on the oil used for frying.

These churros can be eaten with the typical hot chocolate (the traditional chocolate with churros) or with a black pudding cream, with cheese sauce, with red pepper or with any other dish as mentioned above.
