Sweet potato stuffed with quinoa and cheese

  • Preheat the oven to 200º.
  • Cut the sweet potatoes in half and steam for 30-40 minutes.

  • Cook the quinoa until tender or use pre-cooked quinoa.
  • Mix the quinoa with the cheeses and spices.
  • Scoop out much of the flesh of the sweet potato with a spoon, preserving the structure of the skin.
  • Add the sweet potato flesh to the quinoa and add the olive oil, mix well and stuff the sweet potatoes.
  • Add grated cheese to taste and bake under the grill until golden brown.

  • Remove from the oven and place the sweet potatoes on a plate.
  • Top with fresh thyme and a squeeze of lemon.
