Potato chips with roasted garlic cream

  • Peel the potato and slice it as thinly as possible with a mandolin.
  • Place the chips in the oil and leave to soak for 15 minutes.

  • Remove them from the oil, drain them one by one and place them on a baking tray, well spread out.
  • Put baking paper on the baking sheet and place another layer of potatoes so that they are covered on both sides.
  • Place another tray on top so that they are as flat as possible.

  • Preheat the oven to 90º and bake the potatoes for 3.5 hours.
  • Remove from the oven and leave to cool.

  • Place the halved garlic bulbs on a baking tray with a little olive oil and the chopped thyme sprig, salt and pepper.
  • Roast them at 175º for 40 minutes.
  • Peel the garlic and crush it with the oil in the pan to obtain a thick cream.

  • Arrange a potato slice on a plate and place a few dots of the garlic cream on it.
  • Place another potato on top and add a few more dots of garlic cream.
  • Add salt, pepper and some garlic flowers.
