Potato croquettes

  • Peel and wash the potatoes, cut them into chunks and boil them in water until tender.
  • Drain and mash them in a bowl and set aside.
  • Pour the water into a saucepan, add the butter and bring to the boil.

  • Add the sifted flour, stirring constantly.
  • Cook until the dough no longer sticks to the sides.
  • Remove from the heat and add the mashed potato and eggs, season with salt and pepper until a smooth, elastic dough is formed.

  • Take pieces of dough and shape into small balls.
  • Heat the oil in a frying pan and fry the balls for about 3 minutes.
  • Drain on paper to release the oil and serve.
